Raita is such a side dish, without which many Indian dishes seem incomplete. Raita made with curd, spices, vegetables and sometimes fruits is not only delicious but also healthy. Especially in the summer season, the demand for raita increases a lot. However, the only complaint with this dish is that it turns sour within a few hours. If you also have to face such a problem, then we will tell you a trick which will prevent your raita from becoming sour. But before that, let’s learn about the recipe for making a delicious raita.

Raita Recipe

Raita is a semiliquid side dish made from curd, vegetables, spices and herbs. It is usually eaten with pulao, biryani, kebab or snacks.

Ingredients 

1 cup curd (fresh plain curd, more if required)
1 medium onion chopped (2 to 4 tablespoons)
½ Cup cucumbers (peeled and chopped)
¼ Tablespoon salt (as per taste)
1 to 2 green chillies, deseeded and chopped
1 to 2 tbsp coriander (finely chopped coriander)
½ spoon cumin powder or roasted cumin (optional)

Method of preparation

Cool the curd. Wash and chop onion and green chillies. Wash and peel the cucumber.

Wash the coriander leaves with sufficient water. Filter them completely and chop them finely.

Roast 1 teaspoon cumin seeds on low flame till a nice aroma comes out. Cool it and grind it into a fine powder.

How to make raita

Add curd and salt in a mixing bowl. Chop them or beat them with a whisk until smooth.

After this add chopped cucumber, onion, cumin powder, green coriander and green chillies.

Mix gently. Add more curd if necessary. Add salt as per taste.

Garnish with cumin powder on top. Serve raita with biryani, pulao, kebab or paratha.

How to keep raita from turning sour?

Mix all the spices in raita. But add salt just before serving, otherwise the raita will turn sour.
